How do the two processes differ?

Cook & Serve is a process in which food is portioned, transported and served immediately after preparation. This approach requires tight scheduling and the immediate availability of staff and resources at meal times.


Advantages of Cook & Serve:

In the Cook & Chill process, large quantities are prepared in advance and then quickly chilled to +3°C. This preserves the texture, freshness and flavour of the food. The food is portioned and transported when chilled, and is subsequently regenerated shortly before serving.
