Food distribution – a critical process
Food prepared with passion should obviously also still be delicious when it is served to diners or patients. Maintaining this quality standard for the long term presents a challenge, especially when it comes to commercial catering in hospitals, schools and nurseries, and retirement and care homes. Different factors need to be taken into account. Maintaining the required cooling temperature poses the biggest challenge during the production and distribution process in this respect.
A well-established system
The optimum temperature is crucial for perfect food quality and freshness during the distribution process. Speed, a smooth process during transport and portioning, and the use of innovative technology guarantee an uninterrupted workflow.
B.PRO has offered innovative refrigeration technology to cool down food and crockery and keep them cold before, during and after portioning. This guarantees fresh, optimum-quality dishes which keep their flavours and vitamins.
The well-engineered refrigeration systems by B.PRO Catering Solutions ensure an effective, efficient workflow in compliance with the temperatures required by HACCP. All B.PRO products are perfectly matched to one another and form an optimal process flow with a continuous refrigeration chain.
Fresh and delicious at all times
B.PRO convection-cooled dispensers and serving trolleys create the right temperature for food in non-cooled rooms. Thanks to the convection cooling regulated down to the degree, food remains within the HACCP-compliant temperature range until it is distributed on the conveyor.
Dishes can be stored in practical dispensers in the refrigerated room until shortly before use. The pre-chilled dishes also help to maintain the required food temperatures during portioning. The convection-cooled food distribution conveyor operates with a cooled air curtain, which keeps the food at an ideal temperature, even during portioning, thus guaranteeing continuous compliance with HACCP regulations.
Smart cooling stations
B.PRO cooling stations KS-UK RWR 3-A and KS-UK RWR-VP 163 for shelf trolleys and universal dispensers and central cooling stations ZKS-UK 1, 2 and 3 are perfectly suitable for large quantities of food and dishes. The cooling temperature can be regulated down to the degree in all units. These are equipped with integrated convection cooling to chill food and dishes and keep them cold. This ensures HACCP-compliant temperatures for food and dishes, even when outside a refrigerated room. The two cooling stations KS-UK RWR 3-A and KS-UK RWR-VP feature practical roll-in aids, which ensure the shelf trolley is rolled in and out safely. All cooling stations can be operated with a wide variety of standard refrigerants or cooling brines. The cooling stations can also be easily connected to the central cooling system, depending on the workspace equipment and requirements.
The cooling station KS-UK RWR 3-A comes with a few new, innovative features. This B.PRO cooling station is equipped with castors, making it mobile. This means it can be used flexibly in cooling zones and the cooling zones can be laid out as required. The units also feature quick-release couplers, which allow uncomplicated installation with external cooling systems. A newly developed mechanical system ensures that the door is simply stowed away in a pocket fitted to the side when opened, thus no longer getting in the way as staff work.
